Tomato and Herb Sauce

4lb Tomatoes (skin and seeds removed)

12oz Onions (peeled and chopped)

1 handful chopped fresh Parsley (I Tablespoon dried)

1 handful fresh Basil (1 Tablespoon dried)

Grated rind and juice of 2 Lemons

1 teaspoon Salt

2 tablespoons Soft Brown Sugar

Grated Black Pepper to taste

 

Place all ingredients into a large pan, bring to the boil slowly then simmer for 30 minutes.

If you like it smooth liquidise, or just leave it chunky.

Keep simmering until it thickens and covers the back of a wooden spoon.

Pour into sterilized jars with sterilized metal lids (the ones that have the plastic seal) screw the lids on while hot and as they cool the centre disc should pop down to show an air tight seal.

The jars will keep for up to a year in the fridge or cool pantry.
